Annabelle’s Birthday Cake


I can’t believe my beautiful little Annabelle has turned 2! As much as everyone talks about the ‘terrible two’s’ let’s just say so far, so good. She is as adorable today as much as when she was born!

I really wanted to celebrate the special occasion by making a delicious and beautifully decorated cake. Things have been so busy with Dancing With The Stars that I had no idea how I was going to pull it off, but I set myself the goal of making her day special and I’m happy to say I somehow pulled it off (I think little sleep has something to do with it!).

So, I do have a bit of a little secret to let you in on… much of the credit goes to the new Create & Bake range from Coles. I had heard quite a bit about the range before from friends of mine who have tried out the various cookware and recipes.

The best bit is that it’s easy to create what looks like total masterpieces in the kitchen, but in reality is simple and fun. The range is adorable - from cake bases to sprinkles and even sparkly cupcake wrappers and icing toppers, you really don’t need to have skills in the kitchen, just a big imagination!

Annabelle is obsessed with princesses, fairies, butterflies and lots and lots of pink. She was so excited when she saw her decorated princess cake with a side of butterfly cupcakes. I had so much fun making them that I was tempted to do a fairy cake too but a lack of time meant I had to leave it for another day.

I wanted to share with you the step-by-step guide for these three great recipes, to help you create them at home. Your kids will love you for it!

Princess Castle Cake (Serves 16)

What You’ll Need:
2 pkts Coles Create & Bake vanilla bake mix
4 Eggs
120 g Butter, melted
1 cup (250mL) Milk
20 cm Square Cake Tin
3 pkts Coles Create & Bake strawberry flavoured icing mix
180 g Butter, softened
1 1/2 tbsp (30mL) Milk
1/2 cup Desiccated Coconut
Green food colouring
5 Mini Ice Cream Cones
Coles Create & Bake rainbow sprinkles
Coles Create & Bake hearts
2 Coles Bakery Jam Mini Rolls, cut into thirds (use 4, thirds)
1 piece Coles Brand soft strawberry licorice
1 1/2 pkts Coles Brand musk flavoured sticks
Coles Create & Bake princess icing figurines
Smart Buy marshmallows

What To Do:
1. Preheat oven to 180˚C (160˚C fan forced). Lightly grease & line a 20cm square cake tin.
2. In a large bowl, combine the baking mix, eggs, butter & milk. Using an electric mixer, mix on low speed for 30 seconds or until combined. Increase speed to medium high & mix for a further 2 minutes.
3. Pour mixture into a prepared tin & bake for 45-50 minutes for cake or until a skewer inserted in the centre comes out clean. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
4. To prepare the icing, combing the icing mix, butter & milk. Using an electric mixer, mix on low speed for 30 seconds until combined, increasing speed to high & mixing for a further 1 to 2 minutes until light & creamy.
5. Combine the desiccated coconut & green colour in a snap lock or plastic bag or in a bowl, with gloves on to prevent green hands!! Rub together until a grass colour is achieved.
6. Place cake on a serving platter. Sprinkle “grass” around the base of the cake.
7. Ice ends of cones & dip well in sprinkles to coat. Allow to set.
8. Arrange a third of mini roll in each corner of the cake. Using a palette knife & a generous amount of frosting, gently ice the cake all over, including the jam rolls.
9. Arrange upturned cones in each corner on the jam rolls. Decorate mini roll sections with hearts. Place remaining cone in the centre of the cake.
10. Carefully cut each licorice & musk flavoured stick the height of the cake. Place 3 licorice lengths together to create a door at the front of the castle, top with remaining twist. Stick musk sticks onto icing all around the cake.
11. Decorate top of cake with marshmallows, princess decorations & pink pearls.

Butterfly Cupcakes (Makes 12)

What You’ll Need:
For the cupcakes:
1 pkt Create & Bake vanilla baking mix
2 eggs
60 g butter, melted
125 ml milk
12 Coles Create & Bake large pink gigham patty pans
12 hole muffin tin

For the icing and decoration:
1 pkt Coles Create & Bake pink decorating sugar
8 flavoured musk sticks
1 Chocolate Icing pen
Coles Create & Bake pink pearls
Coles Create & Bake butterflies

What To Do:
1. Preheat oven to 180˚C (160˚C fan forced). Line a standard 12 hole muffin tin with large patty pans.
2. In a large bowl, combine the baking mix, eggs, butter & milk. Using an electric mixer, mix on low speed for 30 seconds or until combined. Increase speed to medium high & mix for a further 2 minutes.
3. Pour mixture into patty pans, taking care not to overfill. Bake for 20-25 minutes or until a skewer inserted in the centre comes out clean. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
4. Prepare the icing mix as a glaze, mixing with boiling water. Gently slice a circular piece from the top of each cake, cutting it in half to create wings. Sprinkle with pink decorating sugar.
5. Ice the tops of the cakes around where the circles have been removed. Fill each cupcake centre with some cream. Position wings into the cream to create wings. Trim 6 musk flavoured sticks lengthways in half to create the body. Cut 24 very thin strips out of remaining sticks to create antennae. Arrange a body piece down the centre of each cake.
6. Using the icing pen, gently make a heart shape on each side of the wing & a small dot for each eye. Decorate the insides of the hearts with the pink pearls. Using icing, attach 2 antennae per butterfly & decorate under the wings with the butterflies.

Fairy Cake (Serves 10)

What You’ll Need:
2 pkt Coles Create & Bake vanilla or chocolate baking mix
4 Eggs
120 g Butter, melted
1 cup (250mL) Milk
20 cm Round Cake Tin
1 pkt Coles Create & Bake vanilla icing mix
60 g Butter, softened
2 tsp (10mL) Milk
Green food colouring
White Chocolate Icing Pen
Coles Create & Bake blue decorating sugar
12 Flake Bites or chopped chocolate bars for tree trunk
20-24 pieces Coloured Popcorn
Coles Brand mushroom bite lollies
Coles Create & Bake icing flowers
Coles Create & Bake butterflies
Tiny Fairy decoration of choice
Coles Create & Bake pink decorating sugar (optional, for fairy dust)

What To Do:
1. Preheat oven to 180˚C (160˚C fan forced). Lightly grease & line a 20cm round cake tin.

4. To prepare the icing, combine the icing mix, butter & milk. Using an electric mixer, mix on low speed for 30 seconds until combined, increasing speed to high & mixing for a further 1 to 2 minutes until light & creamy. Colour with green colouring to make a rich grass colour.
5. Ice the top & sides of the cake. Using the white icing pen, make the outline for the stream & sprinkle with blue decorating sugar. To make the fairy forest, arrange the flake bites in a clump & with any leftover icing or icing pen, stick on coloured popcorn for the leaves.
6. Decorate cake with mushroom bites, flowers, butterflies, fairy decoration & optional decorating sugar.
