GUILT-FREE GOODIES


Nothing beats the aroma of freshly baked cookies wafting through your house, especially on a cold winter's day! Now that winter has well and truly arrived (has anyone else noticed how much colder it feels this year!?!) I've had the urge to bake warming, comfort foods. The only downside to this is the sneaky winter kilos that all these comfort foods can lead to. So my solution!? Healthy comfort foods.

With antioxidant rich dark chocolate chunks and gooey protein-filled peanut butter, these diet-friendly delights are absolutely drool-worthy! Plus super easy to make. Give them a go with your kids next rainy day you have. Everyone is guaranteed to love them!

HEALTHY CHOCOLATE PEANUT BUTTER COOKIES

Ingredients Directions
  • 1 can white beans, drained and rinsed
  • 1/2 cup quick oats (or certified gluten-free quick oats)
  • 1/4 cup peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup brown rice syrup
  • 1/3 cup unsweetened baking dark chocolate, cut into chunks
  1. Preheat oven to 175°C. Place a piece of baking paper on a baking tray.

  2. In a food processor, blend everything (except the chocolate) very well in a good food processor. However, if you like a cookie with more texture, you can simply mash the beans with a fork and then mix all the ingredients together by hand. Mix in the chocolate by hand.

  3. Bake for 8-10 minutes, or until cookies are golden brown. Let stand at least 5 minutes before transferring to a wire rack to cool completely. Enjoy!
