Three cheers for making green stuff taste delicious!  This time, it’s the queen of the leafy greens – kale - that we’ve transformed into a dish that is sooo super tasty and super low in calories.  Typically, the taste and texture of kale may not make it the most mouthwatering addition to your regular salad.  But when you prepare it the right way, kale is DELICIOUS and easy to eat. That’s why kale has found its place as a base for so many of our dishes in The Good Life. 

Take this Kale and Bean Jumble for instance.  With creamy potato and coconut oil, protein-packed cannellini beans, onion, kale and Parmesan (yassss cheese!), it’s a fast, easy, filling meal that’ll make your taste buds sing.   Packed full of antioxidants, vitamins and minerals, this is a super nutritious meal that your body will thank you for.  Plus, this recipe is dairy-free, gluten-free, nut-free, sugar-free, vegan and comes in at only 365 calories. High fives all round.

Aside from the fact that kale is one of the healthiest veggies on the planet (we’re talking more calcium than milk, more iron than beef and more vitamin C than an orange) it’s also super versatile in that it can be eaten (or dunk in a Super Green Smoothie) any time of the day.  Our Kale & Bean jumble makes for a warm brekkie dish in winter but we love it just as much for lunch, as a snack or even for dinner.  It works all ways!
