OATS PANCAKE


Makes 1

Vegan / Dairy-Free / Refined Sugar-Free

Base Ingredients

  • ½ cup rolled oats

  • 1 egg 

  • ½ teaspoon coconut oil

Toppings:

  • Peanut butter, to spread

  • ½ cup frozen berries, melted

  • 1 tablespoon coconut or natural yoghurt (optional)

  • Honey, to serve

Method

  1. Combine base ingredients in a small bowl to form the pancake mix.

  2. Melt coconut oil in a medium-sized pan.

  3. Pour in pancake mix and use the back of your spoon to flatten into a pancake shape.

  4. Lightly pan-fry on each side for 1-2 minutes until golden. While you do this, melt berries in microwave for 1 minute. 

  5. Remove the pancake to serve. Spread nut butter and top with melted berries, yoghurt (if using) and a drizzle of honey.
