SWIISH KITCHEN: KALE SUPERFOOD SALAD


With more calcium than milk, more iron than beef and more vitamin c than an orange, Kale is definitely what we’d call a ‘wonder veggie’.  It’s also extremely high in fibre, antioxidants and essential vitamins.  And all this goodness is packed into only about 36 calories a cup!  We also love it because it offers such a refreshing alternative to your typical spinach or lettuce-laden salad.

Despite all this, kale salads rarely get a standing ovation – but that’s only because not everyone knows the secret!  That’s right, there’s a trick to making your kale salad-worthy and it doesn’t include dressing it to the nines… 

So what’s the secret?  Massaging!  Sounds strange we know, but it really works. Massaging your kale helps to soften the leaves and release the powerful flavours within.  We definitely recommend you give this method a try and least once (we guarantee you’ll never look back!)  And if you’re seriously looking to impress a crowd, this colourful superfood salad is the way to go…
