WHIP IT AND DIP IT

240g goat's feta cheese
1½ tablespoons olive oil
80g baby spinach leaves
2 garlic cloves
1 tablespoon chopped basil leaves
Zest of 1 small lemon
Salt and freshly ground black pepper (optional)
Place all the ingredients in a food processor and blend until well combined. You want to achieve a nice whipped consistency. Season with salt and pepper if desired (we generally don’t as the feta is quite salty already).
NOTE: You’ll have to scrape down the sides of the food processor a few times as you go, to ensure that the mixture is well combined.
