There’s nothing like a good old fashioned meatball recipe, especially a cleaned-up, veggie-packed version. We love serving our Healthy Slow-Cooked Italian Meatballs with a huge side salad.

HEALTHY SLOW-COOKED ITALIAN MEATBALLS

Dairy-free
Serves 4

INGREDIENTS

For the meatballs:

  • 500g lamb mince
  • 2 carrots, grated
  • 2 zucchinis, grated
  • 2 garlic cloves crushed
  • 1 onion, diced
  • ¼ cup breadcrumbs
  • 2 tbsp Italian seasoning
  • 100g shredded parmesan

For the sauce:

  • 2 tbsp olive oil
  • 700g jar passata
  • 400g tin chopped tomatoes
  • 1 tbsp dried Italian herbs
  • 1 medium-sized brown onion, roughly chopped
  • ½ cup water
  • Fresh rosemary, to garish

METHOD

  1. Place all meatball ingredients into a large bowl and mix until well combined. Roll into medium-sized meatballs.
  2. Use the sear function on your slow cooker and heat the meatballs, turning occasionally, until browned all over.
  3. Add the remaining sauce ingredients (except the rosemary) to the slow cooker. Cover and leave to cook on high for 3 hours or on low for 6 hours, until the meatballs are tender and cooked through.
  4. Garnish with rosemary to serve. We love plating these meatballs up with a huge side salad or over pasta!
