TURMERIC CHICKEN & SALAD SANDWICH

Serves 2

INGREDIENTS

For the turmeric chicken:

  • 250g shredded chicken breast – we love using the Prime Pulled Chicken from Woolworths
  • 2 tbsp ricotta cheese
  • 2 tsp turmeric
  • ½ tsp chilli flakes
  • 1 lime, juiced
  • ½ tsp salt

For the sandwich:

  • 4 slices wholemeal bread or sourdough
  • 1 tbsp ricotta cheese
  • ⅓ cup purple cabbage, thinly sliced
  • 1 cup mixed lettuce leaves
  • 3 radishes, thinly sliced

METHOD

  1. Prepare the turmeric chicken by adding the shredded chicken to a bowl. Mix well with ricotta cheese, turmeric, chilli, lime juice, and salt until combined. Set aside.
  2. Toast your bread, then spread the tablespoon of ricotta cheese evenly on each piece.
  3. Layer sandwich with cabbage, lettuce, radishes, and turmeric chicken.
