EASY ITALIAN EGG PIZZA
Dairy-free / Vegetarian
Makes one pizza
INGREDIENTS:

1 wholemeal pizza base (replace with a gluten-free base, if needed)

2 tablespoons hummus

1 cup baby spinach

1 tomato thinly sliced

4 eggs

1 teaspoon chilli flakes

1 teaspoon Italian herbs

Salt and pepper
METHOD:

Preheat the oven to 180ºC.

Spread hummus over the base. Top with baby spinach and tomato.

Crack the eggs on top spacing them evenly, closer to the centre so that they don’t drip off the edges. Use a fork to spread the eggs evenly all over, breaking the yolk.

Sprinkle with chilli flakes, Italian herbs, salt and pepper.

Bake in the oven for 20 minutes. Serve immediately.
