Healthy Vegetarian Beetroot Burger

Vegetarian / Dairy-free / Refined Sugar-free
Serves 6

Ingredients

  • 6 store-bought beetroot patties – we love using the Wildly Good Beetroot & Black Bean Burgers from Woolworths.
  • 6 wholemeal or multigrain burger buns
  • 2 avocados
  • Mixed lettuce
  • 2 tomatoes, sliced
  • Whole egg mayonnaise

Method

  1. Cook the beetroot patties as per packet instructions.
  2. To serve, toast the burger buns. Spread 1/4 an avocado on both sides of each burger bun. Add lettuce, tomato, beetroot burger patty and mayonnaise.
